...partnering perfectly with Rainer Becker’s unique style of contemporary Japanese Robatayaki cuisine and urban design…

As the leading name and partner in conceiving and delivering perfect environments for dining and leisure, Summit Design’s expertise is in the design, supply and installation of mechanical services, which includes the highly acclaimed ROBATA front of house barbecue.

With Roka Aldwych, Summit Design was the prominent partner for one of Rainer Becker’s eminent London restaurants, located moments from the Strand and minutes from the River Thames and Somerset House.

... reputation for excellent casual yet up-market dining, smooth service and a western-friendly take on Japanese food

After the recent successful completion of the Roka Mayfair, Summit Design was again responsible for all Roka’s mechanical services installation at its fourth London outpost, including all air conditioning and ventilation systems, plumbing and over a 100 metres of ductwork.

The kitchen ventilation design includes ultraviolet filters which break down the particles of grease in the extracted air, the smoke particulate is removed by 2 banks of Purified Air Electro-Static Precipitators discharging over 8 floors above the busy Aldwych. at the heart of the restaurant

Simon Laxton, Contract Manager at Summit Design explains:

Roka Aldwych demonstrates the strong working relationship we have, partnering perfectly with Rainer Becker’s unique style of contemporary Japanese Robatayaki cuisine and urban design. We complement and support the Roka interior design, including the front of house construction in wood joinery, providing a perfect environment with its traditional Japanese feel without it being too “sushi-esque”!

Dave Veysey added:

This project had particular challenges, Summit were involved to ensure that planning was obtained and also to help overcome some onerous landlords requirements.

The challenges in converting an office space into a fine dining Restaurant and the interfaces thereof were considerable and the Interior Design versus Mechanical requirements hugely important. Our thanks to Design LSM who carried out the interior design for making this integration successful and making the space look amazing.

Tantalizing... Sashimi platter served in giant granite bowl filled with crushed ice... or skewered scallops with wasabi cream, black cod marinated in Yuzu miso” or simply crab and crayfish dumplings or the black cod with sesame bean sauce... deliciously flaky with a thick smoky aroma.
